This is what I cover in my new Nutrition Training for Food Based Businesses.

This 6 weeks, four-module training, educates cafe and restaurant staff on how to prepare meals in a more holistic and nutritious way. Restaurant staff will understand the basics of proper nutrition, and how to adjust customer dietary requests as well as, assist customers in making the right food choices.

This training is to collaborate with your existing team and help add value to your current menu offerings.

This training can also be covered through the Canada-Ontario Job Grant (COJG) program.

Here’s what the curriculum will cover:

Module 1: Food Options

In this module, restaurant employees will know the difference between different dietary options including:

  • Vegetarian
  • Vegan/ Raw
  • Paleo
  • Keto

Module 2: Common Food Intolerances

This module will bring awareness and understanding to common food sensitivities and/or intolerances, while providing alternative methods, ingredients and/or applications in the kitchen.

  • Gluten-Free
  • Soy-Free
  • Dairy-Free
  • Nut-Free

Module 3: Food Substitution

This module will show you how to substitute ingredients for top food intolerances. Together in the kitchen, we will create delicious, nutritious meals, from sauces, appetizers, entrees, even desserts, by combining various aspects of alternative solutions to everyday meals, without compromising on taste.

Module 4: Recipe/Menu Development & Creation

Learn how to plan a meal by incorporating healthier options while addressing different dietary restrictions. We will focus on developing a nutritious and delicious menu, from appetizers, entrees and/or desserts. Recipes will then be created to accompany each meal accordingly, taking into account healthier, more nutritious substitutions.

Basic Bonus Training: Food Handler Training

This basic training will be required prior to starting the modules. If employees are already certified in food handling, then they will not require this basic training and go straight to the core modules.

After module completion, you’ll get two additional weeks of training to ensure employees fully understand the basics of proper nutrition and can confidently adjust customer dietary request.

As part of the training, I’ll personally review your menu and make recommendations for where food can be replaced or added to your menu, in order to meet the demand of health conscious customers, so they don’t go elsewhere. Your employees will know how to properly prepare these meals, in addition to marketing and selling them to new and existing clients.
